Dr. Cordelia Running’s research goal is that food should taste good, even if it’s healthy for you and even if you aren’t healthy. She is an Associate Professor in the Purdue University Nutrition Science Department, and she has a bachelor’s in chemistry, Master’s in Data Analytics, and Master’s and PhD in Food Science. Her research at Purdue University emphasizes how flavor is an important part of how people select their diet, and so addressing flavor when we try to help people improve their diet is vital. After all, food can only be healthy—or unhealthy—if it’s eaten.
