Professor Zata Vickers teaches and conducts research in the Department of Food Science and Nutrition at the University of Minnesota.  Notable research topics include food texture perception - especially crispness, feelings of hunger and fullness produced by specific foods, and factors associated with people’s liking, acceptability, and choice of foods.
