Jianshe Chen

Gail Vance Civille, CEO of Sensory Spectrum, Inc., is a trailblazer in the field of sensory evaluation, driving innovation across industry, academia, and government for 60 years. Her expertise in applying strategic sensory science to R&D and marketing has had a global impact, shaping best practices in the field.

As a leading expert, Ms. Civille developed the Spectrum Descriptive Analysis methodology, creating foundational tools and protocols for evaluating flavor, texture, fragrance, Skinfeel, and Fabricfeel. She has worked extensively with thousands of food and personal care products, employing both consumer and descriptive sensory techniques to drive product innovation and quality.

A dedicated educator, Ms. Civille has designed and led courses for Sensory Spectrum and other professional organizations, covering topics such as sensory evaluation methods, consumer testing, panel leadership, quality control, and sensory program management and advertising claims. She has also published numerous articles and co-authored essential texts, including Sensory Evaluation Techniques - now in its 6th edition - and Sensory Evaluation in Quality Control, as well as co-editing the Aroma and Flavor Lexicon for Sensory Evaluation.

Ms. Civille's contributions have been recognized with prestigious awards, including the David R. Peryam Award (2002), the ASTM Award of Merit (2006), and the Institute of Food Technologists Sensory & Consumer Sciences Achievement Award (2022).
As a founding member of The Society of Sensory Professionals, she played a key role in its establishment and served as its first Chair.

Ms. Civille, a graduate of the College of Mount Saint Vincent in New York with a B.S. in Chemistry, has served on the college's Board of Trustees. She started her career as a product evaluation analyst at General Foods Corporation and continues to shape the industry through her leadership, educational efforts, and commitment to advancing sensory science.
