Juan Diego Torres Oquendo, PhD, Universidad de Antioquia, Colombia

Juan Diego Torres Oquendo is a professor and researcher in sensory and consumer science at the Universidad de Antioquia (Colombia), where he also serves as Research Coordinator at the Faculty of Pharmaceutical and Food Sciences. His work focuses on integrating sensory evaluation, consumer behavior, and food structure, with particular emphasis on texture perception, rheology, and their relationships with product acceptance and health-oriented food design.
He holds a PhD in Food Science from the Polytechnic University of Valencia and completed postdoctoral research at the Instituto de Agroquímica y Tecnología de Alimentos (Spain), working on sensory and physical properties of foods. His research spans both academia and industry, including leadership roles in R&D and innovation.
He actively collaborates with the Asociación Española de Profesionales del Análisis Sensorial (AEPAS) and served as Chair of SenseLatam 2024, held in Medellín, Colombia. His work contributes to advancing sensory science in Latin America, particularly through the development of consumer-centered, health-oriented food solutions.
